As an undead mage myself (level 62 and level 24) I have to tell you to use Frostbolt. That will slow the enemy to a walk so you should be able to get another cast off before it gets to you. Make sure to play the distance game. Get at the furthest possible casting range, take a step in and then pull the critter with Frostbolt. Begin casting again right away and you should have two hits before they get to you. Cast a third time right away and you should be about halfway through the cast before it hits you (interruping your spell and extending the cast time). Once you have fireblast, use that when it is at melee with you, since it is instant cast. Once you get frost nova...you're golden. At level 7 I would suggest fighting things that are levels 5 and 6, although you could beat something a bit higher. I suggest 5-6 because the exp to effort ratio seems to be best at that point. You are less likely to die. You have less down time between fights. You kill the creatures faster, thus increasing your pocketbook as well. Go with hounds, bats, and the undead guys just to the west of Brill.
As for professions, it is never too early to start one! Okay, maybe pre-6 it can be, but since you're 7 that is beside the point. Tailoring is good for mages, because you can make cloth armor and bags from the linen/wool/silk/etc. that you find off (humanoid) creatures. It doesn't require another profession for the most part. If you go with engineering, you will either need to make money to buy the ore you need, or you will need to be a miner as well. But tailor has no second profession to provide the resources you will need. Mining and herbalism are good for making money, as is skinning. Enchanting is kinda good because when you complete quests and get green items that you normally can't use...you can just disenchant them and either use the material you get or sell it. There is some good money in that too. Good luck!

I agree with what the others said as far as the frostbolt is concerned. For now until you get your higher spells (especially the one where you freeze your enemies in place which I forgot the name of since I haven't played my mage in about a year), try to fight enemies that are 2 lvls under you. It'll take you a bit longer to get xp, but you'll die less often. Be very careful with your pulls, don't pull an enemy too close to another enemy. You should get blink soon which helps with running away from the bad guys.
I did herbalism with my mage, but didn't start alchemy until later. That way I could concentrate on my leveling instead of my profession. Once I was at a stage where I wasn't dying a lot, I worked on my alchemy, and had a load of herbs waiting for me in the bank. Tailoring is also a good profession for mages since they are squishies (aka cloth wearers). The nice thing about tailoring is it doesn't require a secondary profession, so you could do mining, herbing, or enchanting and make money. (I have found enchanting difficult to raise though, but if coupled with tailoring you can make items to enchant and disenchant.) good luck!

Basically stay in Trisfal or Durotar until like 10 or so.
Go Frost/Arcane once you hit 10. Also take enchanting and tailoring /or Herbalism/Skinning/Mining. With tailoring, you can make your own armor or with the gathering professions, you can make more money at the auction house.

i had the same problem with my mage in the lower levels the only advice i can give you right now is to get your armor increased (the armor kits that the leather workers make are great)
and
its never too early to start a profession i love tailoring/enchanting for my mage. but i have to warn you enchanting is a hard profession to start

professions you can be engineering for the dynamite or enchanting for the affects. as far as death is concerned. you are a cloth wearer and a spell caster. of you don't have alot of armor and every time you get hit it takes longer to cast your spells. so use frost to slow your enemies down and learn to keep your distance. and if you have a hard time fighting enemies your level fight enemies lower than you until you learn how to fight better.
