Because the queen gypsie, Tia Dalma brought him back to life to give jack's crew a captain (Barbossa) to help them rescue jack from Davy Jones locker. Which we will see in the next movie "At world's end" coming out in may this year, the 25th to be exact!

If Captain Jack Sparrow was ate by the Kracken and can be rescued then same goes for Barbossa.

I think the witch from the second movie somehow brought him back to life. Or maybe the bullet missed some vital organs and just passed through. Hopefully this will be explained in the 3rd movie.
I just hope the kraken doesnt crap sparrow out, lol.

because be couldve made a deal with Davey Jones too and the just stayed out of the water. Or since he was at Tia Dalmas house, maybe he had a charm or something from her to keep him alive, or the bullet that shoot him was from Captain Jacks gun, it couldve had a charm on it to keep it from killing Barbosa too

I'm thinking we will find out in may when POTCIII comes out. I had the same question and watched the first one again after seeing number two, just to figure it out. It will also be interesting to see how Captain Jack made it after being swallowed by the Kracken.

He fought his way back from the dead - which is why they're off to world end in part 3!!
