"flat rate" is the standard time mechanics use to estimate a job...installation only (not removal) is about 4-6 hrs. This does not include any hidden problems such as bad motor mounts or incompatible linkage problem...either with fuel (carbs) or wiring terminals..

Not sure what the labor time is. You would be money well spent to put a real Pontiac motor in it like a 455. Even a 350 pontiac would be better than the 301. The 301s make good boat morings. Some of those era Trans Ams came from the factory with a 403 Oldsmobile motor. My opinion that would be the best motor. They have tons of torque. Even a small block Chevy motor and trans swap would be better. the Pontiac trans will not bolt up to the Chevy motor.
