Coolant can't change temperature that fast. If the gauge jumps all of a sudden it's usually because the coolant level drops below the sensor, or the wire is loose.

Depending on the gauge, the middle may not be hot. If the engine is running hot there can be other reasons than just flushing out the radiator. It might be the thermostat, or another obstruction in the flow, if the radiator is clogged the fluid will not circulate.

Is this where the temperature gage normally stops at (the middle of the gage)? If it does not rise any further then you will not have to worry about the engine overheating. Sometimes the thermostat will wear and open up faster than it did when new. This will account for the fast rise in engine temperature to the normal operating range. As long as the engine is not overheating (maxing out the gage) then I would not be too worried. When the gage starts rising and maxing out then I would start troubleshooting the cooling system.

Replace the thermostat, make sure your cooling fan/s kick on at operating temperature and also be sure you got the air out of the system when refilling it. If this doesn't work you may have a computer , switch, or gauge malfunction giving you a false reading. Check the simple things first...start with the thermosat and fans and no air pockets.

first of all in the middle should not be TOO hot if you know what you are doing change your thermostat if you dont get help its the only thing left unless your water pump is bad you can tell if the water pump is bad by opening the rad, cap then cranking it see if the water is moving if its good the water will be moving good if its bad the water will be just sitting there thermostat costs around 4 to 8 bucks would check my water flow if its ok then change the thermostat or have it done it is easy to do and the auto parts place can tell you how just acouple of bolts

Umm It jumps to the middle? In most cars the middle is where it's supposed to be. Unless it's on the red section of the gauge where it says "H" or hot... don't worry about it.

if the temp jump up all of a sudden then you have air in the cooling system. you need to bleed it out. research online how to do this.
