It's nice that you want to spare her as much as possible. Understand that you can only do so much, though. If she cares about you, she's going to be hurt. She can survive it just fine, but she will be hurt.
You tell her kindly, honestly, and simply. Don't volunteer information she doesn't need (about a new love interest, for example). Give her the information she needs to know (that you want to end the relationship) and be ready for the fact that she probably won't like it. When has anyone ever been dumped and said, "Yes, I agree, thanks for stopping by"?
Remember that she was good enough to catch your interest at some point and be kind and respectful to her. After you've told her, though, let her alone for a while so she can get used to the new situation. Keeping in touch, in the beginning, will only be confusing and uncomfortable for you both.
