There are different kinds of lipids. ex. phospholipids have a phosphate head and a fatty acid tail. These make up cell membranes. Triglycerides have a glycerol head and three tails. (most food fats) saturated fats have straight tails because they are hydrogenated. This causes them to stack on top of each other and solidify. Unsaturated fats have some double bonds in their chains and have"kinky" tails. they remain liuid at room tempature. These are the 'healthy fats.
