Can you only take 2 subject tests? All my friends are taking 3 and I can't figure out why?

I just want to take 2 to meet the minimum UC requirement...
What's the advantage to taking 3 vs 2 subject tests?

Also, how does the SAT II subject test factor into CSU admissions?

people take 3 so the colleges can take the top 2 scores, or they're applying to the super elite colleges that require 3 subject tests. however, 2 is adequate if that's the minimum requirement

UC's only require 2. I took 3 when i applied only because I wanted to have more oppurtunities to get better scores (UC's take the top 2 highest, though that doesn't mean take like 10 and hope to get a few high scores...).
As far as CSU admissions, I'm not sure, but I know that SDSU does not require SAT II's or doesn't weigh them nearly as heavily as the UC's.

Take 3. I got 2 perfect scores in math and reading, but my writing score was only 720, for a total of 2320. I only read this SAT guide, and that is how I got such high scores:
