what are the factors that influence the food practices for mexican food?
e.g. religion, history, food availabilty and tradition

and if you dont mind answering another of my questions,
what is the etiquette for mexican food?
e.g. washing of hands, sitting arrangement.

Cannibalism was hardly practiced among Mexican natives. They did have many human sacrifices but if they ever ate the body it was purely ritual not because of a lack of nutrients!
Now back to the question, most mexican meals include tortillas made of corn, the most obvious reason I can think of is because corn was very abundant and very easy to grow. If you travel to the coastal cities of Mexico you will find that their diet consists mainly of seafood

People historically used what was around them. They knew what grew well in the soil and what didn't cultivate. Aztecs mostly ate corn and veggies, so the poor hardly had any nutrition. The rich/priests/royals ate humans because as meat was scarce, human sacrifices were the only way to get rich proteins needed to be healthy and not die at a young age. Creepy!
