Its called a harmonic. These can be played as "pinch" harmonics (sometimes called artificial harmonics) or they can be played as natural harmonics. Pinch harmonics happen to be my personal favorite, and are the main type of harmonic used in heavy metal.
To play a pinch harmonic, you will use the edge of your thumb to silence the lower frequencies in the harmonic spectrum of a certain note. For example, if you just play a note on the third fret on the low E string, you will get a G note, plus all of the upper partials of that pitch, consisting of basically every G note from that pitch up, going up one octave every time. the amplitude of the partials well get exponentially lower the higher they go.
Now, if you use the edge of your right thumb to ever-so-slightly graze the string after you pick it you will stop the string from vibrating as much and its vibrations will get much tighter and frequent, thus raising the frequency of that note to produce a pinch harmonic. This will take a lot of practice, and at first you will most likely just keep muting the string. If you are muting the string you are silencing the string too much, and if you can hear the note as it would normally sound, you are not silencing it enough.

yah danielv's got it right.
Harmonics and distortion are two ways of upping the pitch of a note.
Not much of an avenged fan, so i can't say for sure which, but danielv's explanation works.

as mentioned below, its called a harmonic, or pinch harmonic. those are played by gently resting your fingers on the strings and pluck the string. pinch harmonics are slightly more difficult involving your thumb
