I have never seen an actual documentary on whaling, but the classic movie Moby Dick (starring Gregory Peck) gives a very accurate portrayal of the life and duties of a whaler. It also has hunting sequences in the movie that are pretty realistic for its time. It shows how the whale blubber is rendered and so on... It would be a good overview - and also Herman Melville's Moby Dick is a good movie to see anyway...

As for real documentaries, here's one from PBS... http://www.pbs.org/wnet/nature/killers/

I think whaling is a sad business... But this should help you.
