Secret Rings is much better i hear, but i havn't played either.
look on websites like www.gamespot.com or www.ign.com
i find the player reviews on gamespot extremely helpfull, since they are true gamers not writers getting paid to do something.

What ever you do don't get Sonic the Hedgehog it's just plain garbage. I'm not even sure that Sega tried with this one. Don't believe me? Take the 4.2 out of 10 from Gamespot.com and the lovely quote "Sonic the Hedgehog may share its name with the Genesis original, but this game is even more broken than most of the other recent Sonic games have been."
Even after playing the game for just five minutes you can realize how broken and slippery the controls are and how wonky the camera is...two major things that can, in and of themselves, ruin a game especially when paired with bad load times (but of course there's more than the mentioned wrong with Sonic...*cough* Shadow and the others)
On the other hand Secret Rings earned itself a 7.6 and the mention "Sonic and the Secret Rings delivers an excellent sense of speed and plenty of depth, and what's just as impressive is that it makes Sonic fun again." It basically kicks Sonic the Hedgehogs butt.

"Sonic the Hedgehog" for the PlayStation 3 and the Xbox 360 is more of like the newer Sonic games ("Sonic Adventure 2", "Shadow the Hedgehog", etc), fancy graphics and a 'mature' story.
Though in some cases, it look like a Kingdom Hearts clone, including a Sakamoto Maaya voice acting. Also it in some cases look a remix of many the previous Sonic games.
"Sonic and the Secret Rings" for the Wii is more like the Sonic the Hedgehog game series for the Sega Mega Drive / Sega Genesis, it focused on gameplay and a wacky story.
If the originial got an egg shaped villain (Eggman), this one got a villain with a giant razor blade (Erazor). But the gameplay tend to get quite difficult later on.

Sonic the Secret of the Rings, Gamespot says 7/10 (Better than PS3 Version, Xbox 360 too.) It has more storyline and has better perfomance.
Sonic the Hedgehog, Gamespot says 3.8/10 (5 minutes waiting for level loading... horrible graphics and perfomance.)

I'd say sonic. It's handling is good and storyline is easy to follow.
While secret of the rings is ok handling wise but the storyline and overall gameplay is too complex.
