Use a promissory note (IOU).

There is a service that does this for a small fee. I heard about this company on public radio. What they do is structure and manage your private loan transaction (family, friend loans), from origination on.

Do just that, both sign, and get it notorized. You say Jack Johnson borrowed $6,000 from Johnson Jack on _______date. Payments are to begin on_________ in the amount of _________. They are to continue each month for the next 52 months. It doesn't have to sound like an attorney wrote it.
