The clove oil is the best, but you have to make sure it doesn't start breathing again. It's really an anesthesia for the fish. I've seen sites that recommend putting vodka in after the clove oil. The next best thing would be to swiftly cut off it's head, but I don't know about you, I'd probably have a hard time doing that. The freezing method isn't recommended, they say that the fish can still feel the pain when the ice crystals form in their bodies. Here's a few links I've found on the topic:

Clove oil will put the fish to sleep and he won't wake up. Its the easiest and painless way for him to go. About the freezing water, I haven't heard anything about that, but the fish may go into shock if put into water so cold. The clove oil should have directions on how much to be used. Sorry to hear about your fish, just be sure to use it somewhere other than the tank or bowl he was in. I also own a beta.

Baking soda is painful and not guaranteed because fish can live in a ph of 8.2 (baking soda and water) just fine. A few drops of clove oil in a small container is best. Be sure to shake up the clove oil and water good before adding the fish.

The clove oil is the way to go. The water should be from his habitat, not almost freezing.

A few (10) drops in a small cup with perhaps 50 ml (1.5 oz) of water. This is the best. Once it stops moving, freeze it. It is unconscious and can't feel a thing now.

You don't need all that. Put the poor fella in a zip lock baggie with water and place in the freezer. He will go to sleep and not wake up. That's the most humane way.

the best way I've found is get a ziptop bag and put enough water in it to cover the fish, insert fish, zip the bag and put in the freezer, or in a bucket of ice, this slows the fishes metabolism and it'll soon pass.

baking soda and water. The baking soda raises the PH of the water quickly, the fish will not have time to adjust to this and his body will shut down quickly, this is the most widley used method to euthinize fish, its like putting them to sleep.
