Well, you didn't mention Naruto, so I'd probably put in a plug for that. (My wife and daughter love it - good for the whole family)
As far as amazing... for visuals I'd probably say Gankutsuo. It's an absolutely unique visual style that I've never seen before or since. And since it's based on Alexandre Dumas' The Count of Monte Cristo, the story is halfway decent.
And if not that, I really liked Ghost in the Shell: Stand Alone Complex. GitS:SAC has strong characters and a great plot.

If you want a good tragic love story, watch Elfen Lied. Be forewarned, lots of blood, and some nudity involved. But if you can put that aside, this is a really great anime that will definitely amaze you.

I've pretty much listed the ones that stuck out in my head. I'm into Ergo Proxy right now but it's a tad complex.

Naruto all the way! It totally rocks! Also maybe Eureka 7 I'm not as much into that but it's good. And an oldy is Sailor Moon... totally awesome! (some episodes)
