They broke the rules (second rule was the same as the first only with more emphasis on the not - you do NOT talk about fight club). Fight club was a training ground for anarchist revolutionaries so he kinda wanted people who were prepared to break the rules for the whole Project Mayhem thing.
Maybe we heard him wrong though.. he coulda been saying 'You, Donut! Talk about fight club..'

They addressed that in the movie. Bob says something to The narrator (Edward Norton) to the effect of, " oh you go on sunday? i go on tuesday!". It was every night and you just go whever you want.
They also mention the rule breaking thing.
Tyler gets all pissed off because a bunch of new members were coming to the meeting, which mean obviosly people were breaking the rule

Our hero does mention that a lot of members are breaking the first two rules.
They also had a regular (Tuesday, I think) meeting under that bar.
