"who" and "which" are not interchangeable... but "who" and "that" are. basically, you use "that"/"who" when you don't use commas, and you use "which" when you use commas:
i smiled at the guy who gave me his book
i smiled at the dog that brought me the news
i smiled at the dog, which had brought me the news

so to answer your question, use "that" and "which" for animals, and use "who" and "which" for people =)

Depending on whether or not you have given the animal a human name. Most author who write about animals in fiction refer to them as a who. Like Bambi who's mother died in the forest fire and left him orphaned . Like Thumper who was Bambi's friend. Get it?

Animals are which or that depending on whether the clause is subordinate or not.
