Well no one can say for sure what it should look like because Shakespeare didn't include the actual wedding scene in the play, but a wedding dress in Italy during that time would have been vary simple, gray (right on on that part), frock that went down to the floor and covered the arms all the way to the wrists. During this time in the Roman Catholic church it would have been important for a woman to appear as modest as she possibly could when she was wed. If you want a good visual try renting the 1968 movie version, not only is it vary well done but the costume designer came up with a pretty good match to what Juliet's dress would have looked like.

Juliet probably would have had an empire- waisted dress style, with hemming done in a silver or gold metalic shade. She would have more than likely had a train and long veil. You could try watching the older version of "Romeo and Juliet" on video or dvd to see other examples of clothing during that time period.
