on our small, sharply pitched roof. What kind of roof is best in a wet area? What kind of undersheathing is best?

Straw. Yes yes, why didn't I think of that? I've some old grass clippings, would that work? :)

I had my roof replaced with a lightweight metal roof. They look very much like tile. Guaranteed life is about 50 years. Only problem is that one must be very careful walking on them.

The type of sheathing depends on the fire resistant rating you require. Local roofers should be able to tell you what the codes ask for.

a roof made out of straw would prob work the best for you
