Lactic acid bacteria are found naturally in milk. Eventually they will cause the milk to sour. They are used to make yogurt. They digest glucose and lactose to make lactic acid. It is the acid that will curdle the milk as in yogurt. They are good bacteria. Also used in cheese making.

Lactobacillus casei is one of the organisms which converts Glucose into lactic acid.Lactic acid curdles Milk into Curd.Lactose (milk sugar) is converted to one glucose and Galactose(which in turn gets converted to glucose)One Glucose molecule (C6H12O6) gets converted to 2 molecules of Pyruvic acid(CH3-CO-COOH).Pyruvic acid under anaerobic (NO Oxygen) condition is converted to Lacti acid.
