A small salad (like the small $1 garden salads at Wendy's), a small can of a low fat, low sodium soup (Campbell's has some good ones) and one of the small Healthy Choice meals, instead of Lean Cuisine.
Or I also do the soup/salad thing for lunch, and the Healthy Choice at dinner...
Good way to cook for one that is still healthy, and with a fairly good selection of decent quality, (decent tasting) meals!
btw...don't forget to recycle your plastic dishes from the meals, and the outer boxes, too! I like to keep a few of the plastic dishes on hand to send leftovers home w/family & friends...that is when I DO decide to cook a big meal! lol

I'd go for the salad although soup sounds good too, minestrone....yummmm....what kind of lean cuisine? You know those things have a ton of sodium, preservatives, msg and other crap in them right? I'd go for salad and maybe soup if it's homemade or healthy choice, they seem to have the least amount of artificial crap and sodium.
