It seems the third task is all but impossible and I am hoping to find a way past it.

To pass thought the first shift, you've to buy a lot of the favourite ice cream (there are 3 favourite flavours, one is the main favourite, just buy 20 of the most favourite and of the other 2). You've space for 10 ice creams and you can buy 1 or2 from the other flavours, because sometimes they want to buy another flavours, too. Don't skip days, because then you get lower rating. If you do this, you'll easily pass thought the first level. I'm stick at level 3, too, and I would be very happy if someone reveals the secret.
