You could probably get away with it. You may look like the guy in the picture, but everytime somebody sees your ID, you stand a chance of being called out. The best way to avoid being carded is to act mature. Don't make a big deal out of having a drink. Do not get loud and obnoxious. Any bartender or bouncer claims they can tell if you are of age just by how you act. If you act like you are drinking illegally in a college bar, then you will need to show that ID over and over again. If you act like an adult, don't expect much trouble.
Another bit of advice, memorize everything on that ID (except maybe the ID number). An easy way to sniff out a fraud is to ask simple questions like, where do you live? What is your date of birth? One bartender I know likes asking people what their sign is. Make sure to give the correct answer according to the ID and not with your own life.
Do not play any game where you could hit a jackpot. If you win more than $1200, then you must fill out tax forms. Then, they will need to see a 2nd form of ID (do you have 2 fake ids?). If you can't do that, they legally cannot give you your prize money. And yes, if you are caught, your losses are NOT refunded. If you are caught, don't expect to go to jail, you will be asked to leave, and your ID confiscated. If you come back, then there could be trouble.
This reminds me of the time I took my friend to Vegas for his 21st. We left at 9:30pm eastern time. It was a 3.5 hour flight, so he turned 21 in-flight. We go to Vegas, dropped off our bags in the room, and went straight to the casino. When we went to cash a travelers check, the cashier asked how old my friend was. Looking at the clock, on the wall (this must have been the only casino in Vegas to have a clock on the wall), it said 11:50. My friend was a 20 year old again. I said what had happened, and the cashier told him to come back in 10 minutes.

THey do body biometrics with their security systems there so you will get busted. It's just a matter of time before you get busted. When you are sitting at the black jack table prufusely sweating because you have lost all but your last five dollars a couple burly guys in black suits will walk up behind you and haul you away to the interrogation room where they will work you over until you tell them where you got the ID and then they will turn you over to the police. It will ruin your vacation. I think you can be a prostitute outside the city in Nevada if you are 18 or older though or is that 21 as well?

Doubtful. Most of the bouncers in Las Vegas look VERY closely at IDs, and the casinos can ask anyone for ID at any time - they also have facial recoqnition software that can tap into the drivers' license banks, and can tell if you're really who you say you are or not.

In your shoes I would try it, and I have done that when I was underage.
But now that I am wiser, I suggest you dont try it. Vegas is used to getting fake IDs, and since most clubs and bars on the strip will have full houses, they will be looking for anything to stop you at the door. Any suspicion on your ID, they will confiscate it and call the police.... not a nice way to spend your trip, and you will be paying for it for a long time. I did, and its still in my record. I advise you against that idea.

You could go to jail. But realistically they will just take it away from you if caught. You will probably be able to drink. But if you win any significant amount of money they will probably double check you and you will not be able to keep the money.
Drink responsibly and tip well and you should be fine.
Draw attention to yourself and you will have problems.
BTW unless you want your friend to get in big trouble, say you found the ID on the sidewalk if you get caught with it.

sounds risky for clubs...but hey, I went last year as a 20 year old and had an awesome time not going to clubs. I walked around the strip with a drink and just tried not to lurk around the bar or gambling areas too much.

It's up to you to try it. If you get caught, I wouldn't say your friend gave it to you because your friend could be arrested.
