the only form of 'space simulator' i remember, was a hughe water tank, like an oversized swimming-pool, and people trained how to pimp up the ISS there in a kind of scuba-diving manner.

sooo .. the hydraulic system of such a basin is in some room nearby consisting of a good portion of pumps and water treatment equipment, filters and so on...

As with any other flight simulator, the hydraulic system is located under the cockpit.
