There is an article on Yahoo New today about a Polish woman who was honored for saving Jewish children.
There are more than just this courageous woman. But, check out the link to be sure.
The Danes were also instrumental in helping Jews escape the Holocaust. You may want to try a Google search using Denmark + Jews or Holocaust.

What I did was I painted a large orange bear on the side of an abandoned building and all the Nazis stopped to look at it and said "this is a stupid place to post this sort of question."

Germans who were sympathetic to their plight. Read the Diary of Anne Frank. It talks about how Germans went against their own country to protect the jews. Also see Schindler's List.
