Use a little ammonia and hot water. Ammonia is a natural degreaser, but it doesn't damage the wood cabinets like many of the chemical compounds will. You can also add a squirt of Dawn to a cup of hot water and use that with your toothbrush to clean your hinges.

My Favorite cleaner for grease or organic stains on any surface is Dawn dish washing soap. You can use it full strength or dilute it with water. I use it in a spray bottle. It is cheaper to use than other products on the market. The toothbrush sure does a great job cleaning those hard to reach spots., combined with the Dawn you will never need to buy anything else. Try it on clothes also to get rid of stains. Works great on babies stained clothes also. Works on new or dried stains.
