Sadly, they stay blue. Apparently, choking to death is the number one killer of smurfs worldwide, because nobody knows that they're choking.

I am going to say purple with the assumption that a combinaition of its already blue color and a rush of blood to the brain(and other things) that naturally red and blue make purple.

Well, im guessing that a smurfs blood is red, and as a smurf is blue, my guess is that it would turn green...
