All stereotypes are wrong and unfair, because they lump everyone together and ignore their individual characteristics.
Some stereotypes of Canadians: boring, no culture, harmless, obsessed with hockey, always says "eh?" at the end of every sentence, very pale skin.
While some individuals may fit some of these descriptions, clearly not ALL Canadians fit ALL the characteristics, so that's why stereotypes are generally unfair.

In my opinion, the most commonly used stereotype would be the jointed head. If you watch an episode of South Park you will notice that the head seems to split in the middle. I have been to Canada and the people seem to have normal cranial geometry. However, the use of the word "eh" is widespread and can become very annoying eh?

I've never heard of a Canadian stereotype, except possibly dropping Os in speech. :-)
