Darwin. Beyond a shadow of a doubt.
His methods and his theory of evolution are the basis of modern biology. There's a quote to the effect of nothing in biology makes sense without the light of evolution, and it's entirely true.
Geerat Vermeij is a modern, living, breathing scientist who also works on evolution- specifically, arms race stuff, and he is also an incredibly impressive and brilliant scientist.

Living- I would have to say Stephen Hawking. He's a brilliant astrophysicist.
Dead- That's a tough call. Newton, Edison, Einstein, Da Vinci, and Galileo among others would be at the top of the list.
