Country singers are noted for their 'cryptic' messages in their songs. I prefer to call it lack of imagination and an inability to find a good rhyme that keeps in context with the song. I think he just wanted to have his daughters sing in his song. Seems to be all the rage with stars pushing their children to act and mimic them.

Wings - symbol of freedom. Everybody wants that.

Watches, hats & wine - material things - nice to have BUT they are not as lasting as "set of wings". One's freedom or independence is far more valuable.
