There are many very nice destinations. I used to work in the vacation industry... If money is no concern look into Antigua, Turqs and Caicos and any of the British Virgin Islands (B.V.I's) and if your are looking for something a little less inexpensive try Dominican Republic. Remember if your looking for a quite, low key vacation its not necessarily the destination its your location. Your travel Agent should now the perfect resort. Ask for something a little bit more remote and if your willing beachside would be another good sacrifice for a more intimate experience ...

When I was younger, my whole family went to the Cayman Islands. The area is mostly geared towards scuba divers, so you don't get a lot of spring-breakers. There were beautiful views and all-inclusive resorts, so we hardly had to leave the resort, unless to sight see. I've also been to Bonaire, which is an island near Aruba. It was very tropical and probably my favorite Caribbean destination. The flight to Bonaire may not be very baby-friendly because you have to take an island hopper from Curacao over, but the vacation was totally worth it!

Sandals, if your going to take the family. They have great programs for the kids so you won't have to worry about entertaining them.
If it's just you and the wife, splurge a little, and go on a nice cruise! She'll love it.

One of the guys I worked for used to take his wife & little kids (even a newborn, once!) regulary to Jamaica. They loved it!
