if the sun were to blow up waould we notice right away or would the the speed of light be too slow to get to planet earth?

It would take a little over 8 minutes for us to find out. That's the light transit time from the sun to here.

We don't know anything's happened on the sun for about 8 1/3 minutes.

If it were stolen, we wouldn't have a clue until 8 minutes, 22 seconds later.
