If they're asking this, you should tell them about any criminal history you have, the process they're using is called self disclosure. You should also use this opportunity to explain any mitigating circumstances at the time of you offence(s). You should also look into whether your convictions are spent. If they are spent, you don't have to disclose them unless you're applying for a job which is exempt in the exclusions and exceptions order of the rehabilitation of offenders act. You can check if your convictions are spent by contacting Apex Scotland. Schedule 4 in the link below lists exempt posts where you have to give both spent and unspent convictions.
The rehabilitation of offenders act also states that they have to consider whether the conviction is relevant to the post you're applying for, how long ago it was, is there a pattern in behaviour, are there mitigating circumstances.

Employers are obliged by law to consider those with criminal records. You will realise that also by law you have disclosure when you have a record but this is null and void after tens years so you are not obliged to disclose your past records after this period of time.
Why not speak to the Job centre plus they can give you advice on these type of issues and perhaps can refer you to a suitable employer.

you should have thought about that before you became a criminal.
to be honest you will have great difficulty, pretty much all employers will ask this, but it doesn't mean they won't employ you. of course that depends on what your crime was, if it was fraud or theft you are going to find it very difficult.
