I have done all 3. I like to shred them. It's fun.

Boil whole potatoes (with skins on) until soft.
Drain. Cover with cold water and refrigerate until potatoes are cold and firm. Remove skin. Shred. Fry on HOT skillet in butter (real butter). Salt. Pepper.

I shred them myself. The frozen ones just dont taste right to me. They're OK for a quick fix, but I prefer to do it myself.

still like to shredd my own, if I have baked potato's left over, have them the next day all shredded with lots of cheese on top and onion's too

I have me salad shooter do it for me. They have too much fat if you buy them frozen.
