So, is the sky really blue? or are our eyes playing trcks on us?

the sky looks blue to us, but it is just a trick of light

think of the outer atmosphere as a prism of glass. in case you don't know when light goes through a prism all the colours separate and make a rainbow effect.

the same sort of thing happens with the atmosphere around the earth. it breaks the colours up (in the order red, orange, yellow, green, blue, indigo, violet from top to bottom). the blue is on just the right angle as it enters the atmosphere to make the sky appear blue.

that is also why the sky can be multi coloured at sunrise and sunset because the light from the sun is passing over just the top layer of the atmosphere.

so technically the sky appears blue to our eyes, but the atmosphere is tricking up as the sky is not a material object so it does not have a colour
