East, West, North, South have been defined by convention.
We have accepted that the point the sun is rising is gonna called "EAST" and the point where it sets it is gonna be called "WEST", therefore it is not a theorem that needs to be proved.
I should say that it is an "AXIOM" which we cannot argue.

If you make the Earth to rotate in the opposite direction, the sun set in the east and rise in the west.

If we considered the South pole the north and vice-versa then the sun would rise in the west because that direction would be considered west relative to the reference markers set into place. Because the Earth spins in one direction and we have decided to call it east.

The earth is moving not the sun. Because the earth moves from west to east it seems to us that the sun is moving from east to west.
