This is a very broad question, in reality you could probably post pages worth of information regarding their many differences. To put it simply the differences between the parties boil down to ideologies, conservatism vs. liberalism.
Republicans tend to be more conservative while Democrats tend to be more liberal.
Conservatives value small government control, more traditional ideas (pro-life and non gay marriage) and stronger homeland defense.
Liberals value a large government, more non-traditional ideas (gay marriage and pro-choice) and more social welfare (welfare programs, universal health care)
Granted, not all Republicans are conservative and not all Democrats are liberal, but this gives you a better understanding of the two.
States are considered either Republican or Democrat depending on what party holds most power in their representatives and what party the Governor of the state belongs to. So for example, New York has several Democrat elected officials including a Democrat governor, so they are considered a Democrat state. States can change their party affiliation however, since elections can bring in different parties and officials.

Oh sure they put on a nice show for you people. Rile you all up with issues like Homosexual marriage, talking about illegal immigration (although they do nothing) They get to call each other names like Fascists or terrorist sympathizers, and accuse each other of wrecking the world etc etc. But the really important things, are all sewn up by the real big boys in power. The global bankers, the media moguls and the barons of industry.
When was the last time you heard a candidate talking about abolishing the federal reserve system of fiat money that keeps America and it's citizens in perpetual debt to large private banks, and returning the sole right of the federal government to print money and control interest rates and inflation? He was shot in the head in 1963, and all talk of that was quickly swept away by LBJ.
When was the last time that our politicans openly and honestly revealed and discussed the fact that a foreign Lobby AIPAC, is the single largest donnor to both political parties and for all intensive purposes controls American foreign policy, especially in the middle east with a unabashedly pro Israeli agenda, even if it runs contrary to the interests of the United States, and is basically a president maker, or killer? Even the Israeli newspapers boast of the fact that AIPAC convention is almost a first primary for President and Senatorial candidates, meaning get AIPAC's approval or you might as well give it up because you arent going to win election. When was the last time our politicians were honest with us and discussed what effect this has on our political process and on our nation as a whole.
When was the last time our politicians told us the truth about illegal immigration and how Illegals are bankrupting the American southwest and costing American Tax Payers over 64 billion dollars a year? Even if they do acknowledge the problem the left and the Ne-Cons both favor a blanket amnsesty solution, which will only make the problem worse.
Really when was the last time that the politicians listened to will of the American people on anything, over some PAC, or special interest group? Not very often, because they don't care about the American people. Both parties answer to the global elite who win under the Lefts international socialism, or the Neo-Cons Zionism. The little man wins at neither game.

It really depends on what the people vote, if the more people vote for the democrat, than that state is a democratic state. Also the republican also cares more about the army and economics, while the democrates care more about natural things

Republicans are pro life
Dems are pro choice
Republicans are pro gun
Dems are anti gun
Reps are pro death penalty
Dems are anti death penalty
Reps are for free trade
Dems are for trade restrictions
Reps are for smaller govt and less taxes
Dems are for taxes as they were (or higher)
Traditional Democratic regions:
The east coast, most of New England, California
Traditional Republican regions:
The South, The Mid West, The Rust Belt
