To be honest, there isn't much between Orlando and Cape Canaveral. There are plenty of attractions in Orlando besides Disney World, though. And of course you can spend the full day in the Kennedy Space Center, especially if you visited all of the different areas you can travel to by bus. My family and I had a lot of fun when we had the "lunch with an astronaut." We're to some degree space junkies, so that was really cool for us. It is a bit expensive, but in my book it was worth it (though I don't know how "normal" people felt about it). Oh and we saw it just a few days before the diaper story happened, but if you went to the 3D film on the International Space Station, you could see Lisa Nowak operating the robotic arm. That's something that would be really weird to see now that she's become infamous.
If you were after other places in Orlando, there's Sea World, Universal Orlando (one of my favorites), and the Orlando Science Center. All of those are somewhat expensive, including the Science Center (they know they can get away with it--that one also has the human "bodies" exibit, but it costs even more to get into that part of it), though. The Science was fairly reasonable compared to Sea World and Universal Studios, but it is more expensive than most museums.
If you would be willing to travel about 1.5 hours west of Orlando (the opposite direction of Cape Canaveral), there's Silver Springs. I found that to be quite fascinating. It's an alligator land. You're in an area which has glass-bottomed boats, so you can see all sorts of fish and alligators and possibly some manitees swimming around in their natural habitat. That I think is one of my favorite memories from Florida, and though my family mostly focused on Orlando, we found the trip to be very worth it. The price is reasonable, too. And when we were there, there weren't tons of people so we didn't have to wait in line for anything. It seemed like one of the places that mostly Floridians went to because it really isn't advertised all that well, though the place is absolutely amazing.

Try the air boat rides at the place along Rt 50 just went of Melbourne. You can travel back towards Orlando and go to Wet and Wild, Sea World, Universal Studios, Church Street Station, tons of great night clubs. There is always something to do in Central Florida. KSC will not be a quick tour. Its an all day deal if you go through all of the exhibits and go out to one of the launch pads. Its amazing what man can do if they apply themselves.

there's no longer plenty interior the nation-state between the Cape and Orlando. There are constructive seashores to the north and south of the Cape on street A1A. have you ever been to Sea international in Orlando?
