I've been to alot of the Strip buffets; the good ones are expensive ($25-$45) for dinner and the cheap ones taste like high school cafeteria food.
If you go off the Strip, you can get a good buffet at a more reasonable price. The Rio has an excellent buffet. (I believe it was about $22 for dinner but if you look in the various tourist publications, you'll find a coupon for $5 off which makes the price much more reasonable.)
If you go downtown, most of the buffets are under $15 and with a higher quality of food than the cheap Strip buffets. (but often not the vast selection of the Strip buffets). At the Gold Nugget, there wasn't a huge selection but if you are a seafood person, you would still be happy there. At Main Street Station, they had a huge selection of typical American buffet fare (similar to an Old Country Buffet - but quality was higher than an OCB.)

The Buffet at the Bellagio is an experience of a lifetime. It's common knowledge you don't want to eat pasta at a buffet, it's just too darn filling,... but OMG is the pasta good at the Bellagio buffet. 5-star food made by some of the bests chefs in the world, and for not too bad of a price, pretty good deal.
But if you are in a pinch, grab a coupon book and take a look at what are some good deals, the only other buffet that I've tried in Vegas was at Bally's, and that was pretty good for the price, and in a nice environment.

The smaller the casino the cheaper the price on their buffet.
Any casino on the strip will rob you blind. You're obviously a tourist if you're on the strip and they take full advantage of it. I go to the Station Casinos for a buffet. They are all over the place and the price is a lot more reasonable than on the strip.

South Point
Locals go for the best deals, thats why we call these local casinos!
Get a players card while you are at it, it will usually get you a discount!

Sunset Station, and the Fiesta are both really good and really cheap, although they dip into Hendertucky, and the inhabitants here are the dumbest people in the world.
