They have crews of people assigned to clean certain parts of the airport. Each crew vacuums the carpet, cleans the windows, and mops the floors. The crews work at different times of the day, but most work when there will be a minimum of traffic through that area. Sometimes they can cordon off an area so that they can clean it properly.

you know i never have. the airport in SLC is mostly tile, and only carpet in some rooms. and the janitors that they hire and pay come throughout the day and vacuum, mop, etc. to find out how long it takes them, try visiting your local airport and ask customer service these questions (they may think you're wierd though) or just a janitor sweeping the floor as they pass.
