For example, a dove represents universal peace and stuff... what animal represents art?

I would say they all do but then I think the ones that stick out the most would have to be a Parrot, Zebra, Flamingo, Tropical Fish, Snakes, and any that I haven't named that are colorful, beautiful to watch, and make you feel tranquil.

Art is so varied there are very few items, none of them animal, that actually represent art. Those would be a palette and a paintbrush.
If we could get a consensus among artists, I wonder what animal we would choose?
