How accurate are the projections?

UN, or some company that collects these data and sells them to government and multi-nationals (Economist Intelligence Unit is one such company)

The census bureau doesn't figure world population - only the U.S. The census was begun as a matter of law in 1790 as a means of counting voters to determine how many reps we would have in the House in Congress. That is still the main purpose.

If they have data re the world population, it is not obtained by our census. However, many countries also have census records taken every 10 yrs as well.

It's pretty accurate. The Bureau makes every effort to contact those who do not send their census data in.

The United Nations, CIA fact books, etc. U. S. Census is about the U.S. however. If you need true proof, go to the frequently asked questions section, they may let you ask a question and wait for an e-mail response from them. I do this with other governmental web sites and I get results the next day or sooner.
