Pieces of another song in a new song is called sampling. (Requires royalties and crediting in liner notes.)
Doing an old song on your new album is a "cover tune". (same)
Taking a lyric or melody and replaying it live to enforce a point in your song is called a tribute. (i.e. Sheryl Crow's "Light In Your Eyes", about George Harrison, has Harrison guitar licks from other songs played by Crow during the song). Usually just requires notifying the original artist - or in this case, the estate.
