Go to Busch Gardens in Tampa.
The ride is called: Shiekra
There's only 3 like it in the world.

Universal Studios Islands of Adventure is also a great choice. Duel Dragons and Hulk are great.

I'd have to give the edge to Bush Gardens though. Better coasters. Better park for the family.
Kraken at Sea World is also a great great coaster, but it's the only good one there.

Best coasters in Florida are located at Busch Gardens Africa in Tampa. They feature 3 coasters that have continually place on the Amusement Today Top 50 Steel Coasters List. Kumba, SheiKra and Montu are all great thrill rides that you can ride over and over again. They've also got a lot of shows and some kiddie rides for your wife and younger kids.
Sea World Orlando is another place for some thrill rides. They feature only two good rides thrill rides though, Kraken and Journey to Atlantis. They, of course, have a lot of shows for your wife and kids.
Islands of Adventure features 3 great coasters as well that are continually featured on the Amusement Today Top 50 Steel Coasters list as well. They've also got several awesome water rides. They've got a lot of kiddie rides and some shows as well.
Disney World is, for the most part, NOT for thrill riders.
Of the three, I would go to Busch Gardens Africa and Islands of Adventure.
P.S. if you wanna go to the extreme... Kissimmee has the world's tallest skycoaster, topping out at 310 feet and swinging at over 90mph. Trust me, its not for the faint-of-heart. If you want real thrills its the place to go They also have a 120mph pnuematic race car ride as well. But the park only features those two massive rides and each ride is a pay-per-ride attraction. Go to a Six Flags for the scariest coasters. For the youngsters go to Disney World. The wife will like it also. Also, the tallest, fastest coaster in the country is in Six Flags Great Adventure in New Jersey. It's called Kingda Ka.

Busch Gardens if you are in Tampa, Islands of Adventure next to Universal Studios if you are in Orlando. Both are good.
