I know exactly what experiement you are talking about because I have my students do something similar.
Did you dissolve the shell in vinegar? If the egg is in a concentrated salt water, the solution is hypertonic and the egg will shrink. The water has moved from inside the cell to the outside of the cell. (The egg being the cell) Once the egg is placed back into water, it will return to it's original shape (maybe even be a little bigger than original size) because that solution will be hypotonic.

It depends. It may be a hypertonic solution and the egg may burst, but it may deflate because of hydrotonic solution. Or it may just stay the same( isotonic solution).
