It happened about 14 Billion years ago. Scientists believe that all the mass in the universe was concectrated in a very small object that exploded. That gave rise to galaxies we can now see in the sky with telescopes. There is an article in the february Scientific American regarding Dark Energy. It seems that scientists always believed that galaxies that were moving away from us were moving away slower. Then with some very careful measurements they found that galaxies were actually accelerating away from us faster and faster. That violated the laws of physics that we knew because in order for them to move away faster, something must be pushing them. That is what Dark Energy is and it is constant over the entire universe. Some of the light that comes to us from distant galaxies is very old. greater than 10Billion light years or very close to the Big Bang. Have fun.

Let me give you the answer from my brain, instead of throwing a link up from wikipedia...
It happened about 13.7 billion years ago when a single point of invinite mass more or less bursted. A few names associated with this: Fred Hoyle, George Gamow, and various PhD students of the two.
I'm not sure on the exact process used to prove it. I belive it was some sort of mathematical calculation using the microwave background. Don't quote me on it though.
