At 6, she should like some thing that has results, that means short term as a rule. I really like the chia pet or gro'head idea. And be ready for the second round. the low care plants are more easily killed by over care than under care. For her age group, short term projects indoors are best, with a promise to move it outside, if apartment living is an issue, better yet, move it to a park. wheat grass, or cat grass is good in a low wide pot for the easter season. Quick to come up and a good place to display an easter egg.

When I was that age, it was always fun to grow a sweet potato in a jar of water. All we had to do was stick a couple of toothpicks into the middle of the sweet potato so the toothpicks supported it on the neck of the jar, then put water into the jar to cover part of the sweet potato. Put into an area indoors that has bright light but not direct sun. They grow like crazy, make really pretty heart-shaped leaves, and you can train the vines up a string that you tack to the wall or ceiling.
It's very low maintenance because you can actually see the water level through the jar, so you know when to water.

Cactus! Hahah, that's a little too easy...
I currently have an Amaryllis that is very easy to care for, especially when you're busy. It keeps sprouting over and over and is fun to watch. It also grows pretty quickly and gets tall.

Aloe-let it get dry before watering again and do not let it sit in water. Get burned, tear of a leaf and apply the gooey coll stuff from inside. It likes sun.

Bamboo.... you set it in water, and it will grow with out any need of supervision or sun. Its actually very hard to kill.
Otherwise, I've had some smaller potted trees that have survived being frozen in my car for hours, too little water, too much water, no sun, too much sun.... and they are gorgeous.

i like "christmas cactus" it can be started by just pinching off a piece and sticking it in the soil. honest. my dad does it all the time. and i brought back one of mine that my dog tore up. and now it is huge and it blooms every year. very nice.
