I'd pay by the hour as long as I am confident that your people are professionals who won't rush and break something but at the same time won't slack off and stretch the time out. Don't know how much I'd pay, you'll want to anonymously shop your competition to find out what's the average. You'll also need to take into account how many people are working simultaneously. If somebody charges 60/hour but they have 4 movers and you only have 2, then your prices will need to be comparatively lower, for example.
