While I appreciate the advice - i am enrolled now in UofP and was inquiring about a certain class....not insight into the school itself.

It seems that the consensus on here and perhaps even other places, that University of Phoenix is not a school that employers find respectable. Perhaps it doesn't have certain accreditations(?) I would try to find a well known uni and check their catalogue for online courses. If you are 'only' taking basic stats/elementary stats, you may be able to save a lot of money and attend community college for that one course.
