There are so many things around Central Florida to do you wouldn't even miss Disney World.
Drive East on the Bee Line, now know as the Beach Line, visit the Space Center. You will need an entire day to see everything there is to see.
Double back on Highway 50, East, for a visit to Ft. Christmas in Christmas, FL a site of overwelming Christmas card mailings around Christmas time.
A visit to the shell museum at Rollins College in Winter Park. While in Winter Park, take the Senic Boat Cruise through a chain of lakes and see homes of the very rich.
The Orlando Science Museum with it's planetarium.
You could drive around Orlando and look for signs of all the boondoggles from years past.
Drive West on I-4 to exit 44, spend most of the day at Fanasty of Flight, ask for directions to the Water Ski Hall of Fame, just a short drive, for the rest of your day.
Drive South on US 27 to Lake Wales for a visit to the Bok Tower and listen to the bells.
Stay in town and visit Leu Gardens, a beautiful walk with flower displays.
West on Highway 50 to Clermont for a visit at the Citrus Tower and it's Hall of Presidents, a wax museum.
I need to stop before you want to become a resident.

If you will have access to a car there are some great day trips to do... Blue Springs, just north of Orlando, is a real nice State Park with warm springs where the Manatees hang out. Lake Mary is great for wandering and unique shopping. There are FREE trips on the gambling boats that go out of Port Canaveral -- yes, free -- have to be "of age" to go. And there is a great seafood joint at the Port called "Rusty's"... not dressy at all and great food! There are also some really great museums in Orlando... and if you are travelling with kids, the Orlando Science Center is a great way to spend a day -- esp. if the weather gets icky!

Which part of Central Florida will you be in?
The Orlando area is most famous for the theme parks: Walt Disney World Resort (Magic Kingdom, Epcot, Disney-MGM Studios & Animal Kingdom), Universal Orlando (Universal Studios & Islands of Adventure), and Sea World Orlando. The surrounding areas have plenty of other activities -- go carts, parks, etc.
Tampa has Busch Gardens and the beaches.
Daytona Beach is of course known for its beaches, and there are plenty of other things to do there as well.

There are a lot of small site seeing areas in that area. You can go to Orange City and see Manatees or up to Ocala and see where the old Tarzan movies were made. Go to Deland and walk on the Campus of Stetson University. One of my favorites through when I lived in Deland, was to go to Daytona Beach and watch all the tourists get their cars stuck in the sand because they parked too far up in the soft sand.
That is the East Coast we're talking about.
