Usually a mares temprature goes down a couple degrees when they go into labor. When you touch their flanks they may flinch anyway because that is a sensitive area. The grumpy attitude is normal when mares get closer to foaling. When her nipples swell up that means she's close, but look for a clear to white waxy substance on her teats, this means she's 24 to 48 hrs. away from foaling.

I've only had a few mares get a higher temperature than normal when they went into labor. If her bag is swollen and the ends of her teats are covered in wax then she will foal within 48 hours. Every mare is different though, so just watch for changes. About the attitude, she might just be having a bad day. Just keep an eye on her though.
